Fantastical Pop-able Popcorn Clusters
Popcorn is the universal movie snack. Let’s transform it into green and pink clusters that ties right into the Wicked: For Good theme, while keeping recipe accessible. We will create pink clusters using crushed freeze-dried strawberry powder. Matcha will be used for Emerald City green clusters. This recipe is easy to portion, utensil-free, and has minimal prep. Kids can help with coating on popcorn and watch the transformation to pink and green and help with creating clusters and cloud shapes.
Ingredients:
6 cups plain popped popcorn
1 cup white chocolate chips, divided
1-2 tablespoons strawberry powder*
1/2 teaspoon matcha powder**
1 tsp coconut oil (smoother melting)
*Strawberry powder instructions: Blend freeze dried strawberries until finely ground.
**Matcha powder can be subbed for spinach powder—won’t fight with white chocolate flavor
Directions:
1. Line a tray with parchment paper.
2. Divide popcorn evenly into two bowls.
3. Pink Batch: Melt 1/2 cup white chocolate (microwave covered in 20 second intervals, stirring). Stir in 1-2 tablespoons strawberry powder until fully combined and blush pink. Pour over half the popcorn and toss gently to coat. Press into small clusters and place on tray to cool.
4. Green Batch: Melt remaining 1/2 cup white chocolate. Stir in 1/2 teaspoon matcha powder until evenly green. Toss with remaining popcorn. Press into clusters and place beside pink clusters on tray.
5. Place each batch in airfryer separately at 300-325 degrees for 2-3 minutes to set coating. Cool until firm.
6. To serve: Arrange clusters alternating pink and green clusters for dramatic contrast.
